Oils for processing/processed oils

Vegetable oils are obtained by pressing and extracting oleaginous fruit and seeds. Vegetable oils often contain a higher proportion of unsaturated fatty acid residues than animal fats and are therefore classified as healthier. On account of their varied composition, vegetable oils differ in a considerable number of properties. An example of this is the smoke point which is specific to the type of vegetable oil and for a number of common types ranges between 130 and over 200 °C.
