Vegetable oils are obtained by pressing and extracting oleaginous fruit and seeds. Vegetable oils often contain a higher proportion of unsaturated fatty acid residues than animal fats and are therefore classified as healthier. On account of their varied composition, vegetable oils differ in a considerable number of properties. An example of this is the smoke point which is specific to the type of vegetable oil and for a number of common types ranges between 130 and over 200 °C.

Organic cooking oils from controlled organic cultivation

Vegetable oils which are produced from seeds or fruits from controlled organic cultivation can only be obtained by cold pressing in compliance with determined maximum temperatures. Extraction is not permitted. Furthermore, the use of genetically-modified (GMO) seeds, as is generally the case, is forbidden in organic cultivation.  Refining is, however, allowed in the organic sector using specially-approved processing agents and in compliance with specified maximum temperatures.

Organic rapeseed oil

Organic rapeseed oil, as a main component, contains over 70% mono-unsaturated oleic acids. This is the reason rapeseed oil has a high heat tolerance.

Organic sunflower oil

The sunflower, originally found growing wild, has, as a main component, di-unsaturated linoleic acid. This is very healthy but cannot be heated at a high heat. Sunflower varieties rich in linoleic acid are termed "linoleic".

Through breeding, sunflower varieties with a high proportion of mono-unsaturated oleic acids have been achieved. These are referred to as "higholeic“. The oil obtained from these sunflowers is called High oleic sunflower oil. This oil, like rapeseed oil, has a significantly higher heat tolerance and is used for frying in many cases.
